    Use the young fertile stems, (those without whorls) in early spring. Strip off outer stem to remove the silica. Boil 20 minutes in 1 change of water, or batter and fry.
    Rhizomes can be used but are time consuming. Eat raw or cooked, or pound as a thickener.
    Shoots as a potherb.
    Tough older skins, peel and eat pulpy material raw, in small or moderate quantities.
