Wild narturtium similar to watercress, mild peppery flavor.

OK. So one year I didn't have all the ingredients for my peppery flavored lace cookies. It was interesting !(no vinegar though, steeped in simple syrup with brandy.

Put some vinegar in a jar with a little salt and as you gather the flowers, add them. Replace lid and save for later use.
Or a simple syrup and brandy, or just brandy. Don't know how much use you would get out of this, still experimenting.
Although I did use it in a salad of slightly green strawberries and garlic, tried to find the recipe, but the newer version of joy of cooking doesn't have it anymore.
You could use it in a dressing.
