    Asparagus with sole

    List of Ingredients


    • 1 pound asparagus
    • 1 pound sole fillets (4 pieces)
    • 1/4 tsp salt
    • 1/3 tsp grated lemon peel
    • 4 T squeezed lemon juice
    • 1/8 tsp black pepper
    • 1 T chives, finely chopped
    • 1 tsp mildly flavored mustard


    Instructions


    1. Cut asparagus in 3 inch lengths. cook in 2 quart saucepan for 5 minutes, drain. Set aside. Season the skin side of the fillets with salt and lemon peel.
    2. Place asparagus spears at one end of each fillet. Roll up fillets with asparagus spears inside and secure with round toothpicks.
    3. Place in a 2quart casserole dish liberally sprayed with non-stick cooking spray.
    4. Bake at 400 degrees F. about15-20 minutes or until fish flaked easily. Baste fish every 7 minutes.
