    List of Ingredients


    • 8 pounds of fish
    • 1 3/4 ounce salt
    • 3 1/2 ounce fat or oil
    • 8 3/4 ounce starch
    • 3 1/2 ounce breadcrumbs
    • 2 T white pepper
    • 2 1/2 tsp dill weed
    • 1 1/2 tsp seafood seasoning
    • 1/2 tsp nutmeg


    Instructions


    1. Skin and bone the fish fillets. Grind the fillets with the fine plate on grinder. Then grind the fat with coarse plate. Finish by grinding the breadcrumbs with fine plate.
    2. Put all the above ingredients in a large bowl. Add the spices and starch. Mix in water and blend thoroughly. To your grinder add the sausage stuffer horn and slip casing onto horn. Tie off the end after stuffing the first 6 inches. Stuff casing allowing it to slip off the horn when it is moderately packed.Link by twisting.
    3. Water cooking; Cook in water not hotter than 190 degrees F. for about 30 minutes.
    4. Smoke cooking Cook in the water about 3 minutes. Then dip in ice water for 3 minutes. Smoke at 140 degrees F. for about 3 1/2 hours.


    Final Comments


    Fish seasoning; 1 T ground bay leaf. 1 tsp salt. 1/2 tsp celery seed, 1 1/2 tsp pepper. 1/2 tsp each ground clove,ginger and paprika. 1/4 tsp ground mace or cardamom. Grind in small food processor until celery seed is ground up.
