    geoduck clam necks
    flour
    salt
    pepper
    butter to fry

    The neck of the clams are blanched, then peel them. Cut one side open lengthwise.
    Pound it like you would abalone.

    Dredge in flour seasoned with salt and pepper.

    Pan fry in a little butter (or olive oil).

    These are very rich, so serve less than you would of meat.
