    Curried Miniwaffles
    Make waffle batter, adding curry powder to taste. Drop quarter size dollops of batter on waffle iron. Cook briefly. They should be about 2 inch in diameter.
    Top each with sour cream, creme fraiche and a curl of gravlax

    BLTs
    Make a BLT and add a sliver of gravlax.

    Club sandwich
    Prepare the BLT, adding a thin slice of chicken breast before the gravlax.

    Open face sandwiches
    Top bread with gravlax, mustard sauce, chopped red onions, chopped hard boiled egg whites or sieved yolks and drained capers.

    Cucumber Canapes
    Alternatle peel strips of cucumber rind, slice cucumbers on the bias about 1/4 inch thick. Top with paper thin slices of gravlax, A drizzle of creme fraiche and a half of a Kalalmata olive.

    Gravlax Bagel
    1 pumpernickel or plain bagel (6 oz.)
    2 tablespoons chive cream cheese
    1/3 cup thinly sliced English cucumber
    3 ounces thin-sliced smoked salmon
    3 thin rings red onion
    1/2 teaspoon drained capers

    Preparation

    Split bagel in half horizontally. Spread cut sides with cream cheese. Over cheese on 1 bagel half, layer cucumber, smoked salmon, red onion, and capers. Set remaining bagel half, cream cheese side down, over filling.

    Avocado seafood wraps
    Wrap strips of gravlax around slices of avocado and greens such as mesclun or mache. Crab or shrimp can also be bundled with the avocado.

    Gravlax roll ups

    1/2 English cucumber
    24 thin slices gravlax or smoked salmon
    24 pieces frisée lettuce, (about 1 cup/250 mL)

    Preparation:

    Peel cucumber; halve lengthwise and scoop out seedy core. Cut into 2- x 1/4-inch (5 cm x 5 mm) sticks. Place 1 stick along short edge of gravlax slice. Place 1 frisee on top, letting curly tips hang over edge. Roll up securely; place, seam side down, on platter. Repeat with remaining ingredients. (Make-ahead: Cover and refrigerate for up to 6 hours.)

    Deviled egg
    Top deviled eggs with minced gravlax.
