Grease a 9x5 1/2 x2 3/4 loaf pan.
Grind enough toasted almonds to make 1 1/4 cups. Finely flake salmon to make 2 cups, set aside.
Prepare a medium white sauce and invert 3 tablespoons into 3 egg yolks, slightly beaten and return to sauce. Add the almonds and fish with 1 1/2 C breadcrumbs, 1/4 C finely chopped onion and 4 drops Tabasco. Add 2 teaspoons salt, 1/2 tsp pepper, and 1/2 tsp paprika.
Beat three egg whites to rounded peaks and spread over fish and fold together. Put into loaf pan. Bake in a Baine Marie at 350 degrees for 1 hour and 10 minutes. Unmold and serve with creamed peas, parsley or lemon slices.
