Oyster and Sausage Fry

Parboil 1 pound of sausages, prick them with a fork and fry in this grease. Remove from pan and keep warm.
In some of the fat from the sausages, fry the oysters (1 quart) not more than 2 minutes per side. Squeeze lemon or lime juice over. Cut up the sausages into 1/2 inch thick slices and serve with oysters. Make a gravy of the pan drippings, oyster liquor and flour or cornstarch. Celery, garlic and scallion may be chopped in and a pinch of gumbo file added.
