    Place fish on a rack in cold water. Change water several times in first couple of hours. Then let stand 10-12 hours or more. Drain and refresh water, heat very slowly over low heat to 180 degrees F. (just below a simmer). cook at this temperature until tender and can be flaked with a fork. Drain and serve or use in a recipe of your choice.
