Shrimp Imperial

Prepare 1 1/2 pounds shrimp in 3 cups water. Reserve 3 shrimp and cut rest in half. Chill.
In double boiler, heat 1/4 cup butter and saute2/4 cups chopped bell peppers and 1/2 cup minced onion. Blend in 3 tablespoons flour, 1 tsp salt and 1/8 tsp pepper. Heat until bubbly. Remove from heat,add gradually, 1 cup evaporated milk and 1 cup water. Bring to a boil, stirring constantly for 1-2 minutes. Invert into 2 egg yolks, slightly beaten and return to double boiler. Simmer 3-5 minutes. Add shrimp and 1/2 cup mushrooms, sliced, 3 tablespoons chopped pimiento, 1 tablespoon finely chopped parsley, 1 tablespoon horseradish and 1 tablespoon Worcestershire sauce. Cook, stirring occasionally to heat through. Serve garnished with 3/4 cup grated cheese and add some parsley and pimiento as a garnish.
Var; Serve in toast cups or pastry shells.
