    Sturgeon Balls De Luxe with Crab

    Cut the recipe in half for a family meal.

    List of Ingredients




    Make a rich cream sauce, add about 14 sturgeon balls and 1 can of crab meat, 1 small bottle of drained capers(opt), and 1 T chives or parsley. (or both).

    Sturgeon balls;
    cut up 3 pounds cleaned sturgeon
    1 pint rich milk (more if needed)
    1 medium onion
    1/2 tsp nutmeg
    1 tsp mace
    3 tsp salt
    1/2 tsp pepper
    2 T potato flour
    2 T all purpose flour
    Grind sturgeon 3-4 times with onion. Put in electric beater, keep beating while adding milk slowly, add rest of ingredients, beat about 20 minutes(more beating the better). Drop part at a time by tablespoons in hot broth made from trimmings of sturgeon. Cook 15 minutes.
    These can be frozen.

    Rich cream sauce;
    4 C milk
    8 eggs, beaten lightly
    4 tsp. butter
    white pepper to taste

    How to make it
    Make a cream sauce by boiling the milk in a double boiler, then pour part of it over eggs, beaten lightly, and adding this to rest of milk in boiler, stirring vigorously with beater, throughout process until sauce begins to thicken, add butter, season with pepper, and if preferred chopped parsley.
