    Frosting, California Tutti Fruitti

    List of Ingredients

    2 egg whites
    1 1/2 C sugar
    3 T water
    2 T lemon juice
    dash salt
    grated rind of 1/2 a lemon
    1/4 tsp almond extract
    3/4 C broken walnut pieces, toasted
    1/2 C currants
    8 maraschino cherries, finely cut
    1 1/2 C Southern style Bakers coconut

    Recipe

    In upper part of double boiler, combine the first 5 ingredients. Beat until thoroughly mixed. Place over rapidly boiling water, beating constantly. Cook 7 minutes, or until it will stand in peaks. remove from fire and add lemon rind and extract. To one third of mixture add nuts, currants and cherries. Spread this between layers of cake. use rest to frost top and sides of cake. Frosts and fill two, nine inch layer cakes.
