    3 green plantains
    2 T olive oil
    2 cloves garlic, pressed
    14 oz chicken stock
    1 tsp ground cumin
    2 T chopped cilantro
    2 tsp fresh lime juice
    salt
    pepper

    Recipe



    Slash the skin of each plantain lengthwise, then cut crosswise at 2 inch intervals. Pry the skin off and discard. Slice the pieces crosswise again into smaller pieces. Heat the oil in a skillet over medium heat. Press the garlic in a garlic press and add to the oil. Stir until it begins to color, 1/2 minute.
    Add chicken stock, cumin, plantains and 3/4 cup water. Bring to a boil, cover pan and reduce to low heat. Cook 30-40 minutes or until tender enough to mash. Add cilantro and lime juice. Mash to a coarse puree. Thin with water if too stiff. Season with salt and pepper.
