    Rabbit, Fried

    List of Ingredients

    1 rabbit, cut into serving-size pieces
    1 cup flour
    water
    2 tsp salt
    1 T vinegar
    1/4 tsp black pepper
    2 T finely diced salt pork
    1 onion, chopped
    1 clove garlic, sliced
    3-4 sage leaves, crumbled
    1 tsp chipotle chilies


    Recipe

    Soak the rabbit in cold water and the vinegar,salt and pepper.
    Combine the chili, sage, some salt and pepper and use as a rub for the rabbit. Fry the salt pork (bacon).
    Roll rabbit in mixture of flour, salt, and pepper. Brown in the fat. Add onion,1 T water and 1 T vinegar. Cover and simmer until tender on low heat, by raising the skillet above the fire. You may need to add a little water from time to time. Remove cover the last 10 minutes to brown.
