    Irish Roast Goose with Potato Stuffing

    Preheat oven to 375 degrees F.

    List of Ingredients




    1 wild goose
    1 tsp salt
    1/4 tsp pepper

    Stuffing;
    10 medium potatoes, riced
    1 T fat
    1 C chopped onion
    1/2 C chopped celery
    4 bread slices, crumbled
    1/4 pound ground salt pork
    2 eggs, beaten
    1 tsp poultry seasoning
    1 tsp salt
    1/4 tsp pepper

    Recipe



    Clean and dry goose. Rub cavity and outside with salt and pepper.

    Stuffing;
    Save potato water for basting the goose. Rice the potatoes. put fat in skillet and partially cook onions and celery, but do not brown. Add to potatoes,bread, salt pork, eggs, poultry seasoning, salt and pepper.
    Stuff goose with this stuffing and sew up.
    Roast goose about 3 hours, or longer if preferred well done, basting from time to time.
