    2 wild rabbits
    lemon juice
    salt
    pepper
    nutmeg
    egg
    bread crumbs
    parsley
    green peas
    toast

    Recipe



    Dress and disjoint 2 rabbits. Wipe clean and parboil 10 minutes in water containing lemon juice. Drain.
    Season with salt, pepper and a hint of nutmeg.
    Dip in beaten egg, then in very dry breadcrumbs. Fry in deep fat. (have fat hot enough so that a 1 inch cube of bread browns in 60 seconds.
    Drain free of fat by holding each piece on a fork over a low flame. (at this point I would let everyone do his own). This leaves the rabbit crispy and not fatty tasting.
    Place pieces on a hot dish, garnished with parsley, and serve with peas on toast.
