    Recipe Introduction


    Squirrel is medium red in color and pleasant tasting. Only the oldest, toughest animals require parboiling for tenderness.

    List of Ingredients




    1 squirrel
    2 qts boiling water
    1 C corn
    1 C Lima beans
    2 potatoes
    1/2 onion
    1 1/2 tsp salt
    1/2 tsp pepper
    1 1/2 tsp sugar
    1/4 tsp butter
    2 C tomatoes

    Recipe



    Clean squirrel and cut into 6-7 pieces.
    To the water add the squirrel, corn, Lima beans, Potatoes, onion, salt and pepper. cover and simmer for 2 hours. Add the tomatoes and sugar. Simmer for 1 hour. Add butter and simmer for 10 minutes.
    Bring to a boil and remove from fire. Add additional salt and pepper as desired.
