    2-3 pounds venison shoulder roast
    1/2 pound salt pork
    2 T flour
    salt
    pepper
    1 1/2 C water
    1 tsp salt
    1/4 tsp pepper
    1 bay leaf
    4 carrots
    8 parsnips
    4 potatoes
    4-6 small onions

    Recipe



    Lard the meat with salt pork. Fry enough salt pork to obtain 2 tablespoons fat. Brown the meat in the fat. Remove the meat and brown the flour in it. Add water and seasonings. Set the meat above this on a rack. Simmer, covered until almost tender. Add the vegetables and cook 45 minutes. Thicken the gravy if needed.
