- 4 medium potatoes
- 4 slices bacon
- 1 medium onion, sliced
- 2 C sliced mushrooms
- 1/2 C sour cream
- salt and pepper to taste
- 2 T chopped parsley
Instructions
- Boil the potatoes and thinly slice. fry the bacon until crisp. Cool and cut into half inch pieces. Reserve 2-3 tablespoons fat and add bacon and onions. Add mushrooms and saute four minutes.
- Stir in sour cream, salt and pepper and just heat through so as not to curdle the sour cream. Garnish with parsley.
