    German Potatoes

    List of Ingredients


    • 4 medium potatoes
    • 4 slices bacon
    • 1 medium onion, sliced
    • 2 C sliced mushrooms
    • 1/2 C sour cream
    • salt and pepper to taste
    • 2 T chopped parsley


    Instructions


    1. Boil the potatoes and thinly slice. fry the bacon until crisp. Cool and cut into half inch pieces. Reserve 2-3 tablespoons fat and add bacon and onions. Add mushrooms and saute four minutes.

    2. Stir in sour cream, salt and pepper and just heat through so as not to curdle the sour cream. Garnish with parsley.
