    Barley Mushroom Casserole

    List of Ingredients

    1/3 C butter
    1 medium onion, chopped
    1 C sliced mushrooms
    1 C pearl barley
    3 C boiling consomme
    salt
    pepper
    2 T chopped parsley

    Recipe

    Saute onion in butter until just tender. Add mushrooms and saute 3 minutes. Add barley and saute 1 minute. Pour in consomme, return to a boil and season. Lower heat to low and cook, covered 1 hour. Add parsley.

    Var; Add 1 T lemon juice if desired.

    2. lightly saute 1/2 pound sliced mushrooms in butter before adding to casserole

    3.Sprinkle the top of the casserole with 1/2 cup finely chopped toasted almonds.

    4. add 1/2 cup finely chopped parsley, 1/4 cup finely chopped chives or scallions and 1/2 cup pine nuts.
