    Grits, Basic Fried

    4 C water
    1 tsp salt
    1 C Albers quick grits

    Recipe

    Bring water and salt to a boil in a medium saucepan, slowly whisk in grains. Cover and reduce heat to low. Cook, stirring occasionally for 5-6 minutes.
    Pour grits into a 9x5 loaf pan, Chill for 1 hour or until firm. Remove from pan and slice 1/2 inch thick.
    Grease a large skillet and fry slices over medium heat for 4-5 minutes on each side or until lightly browned.
