    CREMA DI SEDANO (cream of celery soup)

    List of Ingredients


    • one large celery
    • juice of one lemon
    • salt
    • pepper,freshley ground
    • one tablespoon butter
    • one tablespoon white wine
    • one tablespoon parsley
    • one clove of garlic, finely chopped
    • one cup vegetable stock


    Instructions


    1. Clean celery. Remove tough outer stalks and stringy fiber. Chop coarsley and soak in a bowl of water with the lemon juice for ten minutes

    2. Drain well

    3. transfer to a pot and add butter, wine, parsley, garlic,salt and pepper. Cook until the wine evaporates.

    4. Add the stock and simmer for ten to fifteen minutes more.

    5. Puree in a food mill. Reheat.
