    * 1 whole cabrito
    * 8 strips bacon
    * 1 C butter
    * 1 tsp finely ground red chili
    * 1 cup sherry wine
    * salt to taste
    * 1/4 cup green onion chopped
    * 4 cloves, pressed
    * 1 tsp. white pepper
    * 1 T powdered fennel


    Recipe



    Simmer butter, chili, wine, pepper, salt, onion and garlic in a sauce pan for about 15 minutes, until the flavors are well blended.
    Rub the kid with the fennel and white pepper. Place cut up goat in a roaster and pour the sauce over. (Reserve drippings). Place bacon strips over. Cover and cook at 375 F for about 1/2 hour, until almost done. Then place goat on coals of a mesquite fire. Baste with the reserved sauce and let it smoke until tender and done.
