    List of Ingredients




    * 8 lamb loin chops
    * 3/4 C sliced chilies
    * 1 large Spanish onion, sliced in rings
    * 1 clove garlic, chopped
    * 4 green tomatoes, peeled
    * 1 tsp dried oregano
    * 1 tsp ground cumin
    * few sprigs cilantro, minced
    * 1 tbsp olive oil
    * 5 oz dry red wine

    Recipe



    Brown the chops. Set aside. Sautee onion and garlic until soft and transparent. Quarter the tomatoes and add them to the skillet. Mash them as they cook. Add remaining ingredients and cook to a medium thick sauce. Return the chops to the pan and baste with the sauce. Simmer 20-30 minutes
    Serve with small potatoes, that are sliced and quickly fried in a little olive oil, and vegetables of your choice.
