    The original recipe called for lambs quarters, also known as amaranth. You can use other wild greens, collard greens, kale, or spinach if desired

    List of Ingredients




    6 slices bacon
    1/2 C flour
    1 tsp ground pepper
    1 pound cod, in bite size pieces
    1 pound potatoes
    1 medium onion, finely chopped
    1 pound greens
    1 pound greens

    Recipe



    Fry the bacon, remove from pan and crumble. Reserve.
    Peel and slice potatoes, brown them lightly with the onion in the bacon fat. Reduce heat to low and continue to cook.
    mix the flour and pepper and dredge the fish in it.
    Wash and steam the greens.
    Place the potatoes and onions in a casserole dish. Fry the dredged fish, and when almost cooked place on top of the potatoes. Add greens on that and add a cup of water over. top with bacon. Bake 1/2 hour in 350 degree oven.
