    Mushrooms for tapas

    List of Ingredients


    • 2 T olive oil
    • 2 T butter
    • 1/2 medium red onion, diced
    • 1 pound wild mushrooms
    • 2 cloves garlic, pressed
    • salt and pepper to taste
    • 1 C dry sherry
    • 1/2 C chopped flat leaf parsley


    Instructions


    1. Heat olive oil and butter over medium high heat, saute onions, until softened. Add mushrooms and cook until browned and release their liquids. add garlic, salt and pepper and saute 30 seconds. Add sherry and cook, stirring, until liquid is slightly reduced.
    2. Add more liquid as desired, more sherry or broth. Serve with a rustic bread to soak up juices, and marinated, beef skewers
