    Shrimp tapas

    List of Ingredients


    • 1 and one quarter pounds of shrimp, peel and devein
    • kosher or sea salt
    • 1 C olive oil
    • 4 cloves garlic, finely chopped
    • pinch of red pepper flakes
    • 2-3 T minced fresh flat leaf parsley
    • rustic bread


    Instructions


    1. Pat shrimp dry and sprinkle with salt.

    2. put olive oil and garlic in 10-11 inch heavy skillet over medium low heat. Cook the garlic in olive oil for 2-3 minutes until fragrant. Add red pepper flakes and stir a few seconds.

    3. Add the shrimp and cook about 3 minutes or until they just begin to turn pink. Season to taste, add parsley and cook a few seconds.

    4. serve with the rustic bread to mop up all the juices.



    Final Comments


    You can also use clams or mushrooms.
