    Recipe Introduction

    Serves 2.

    List of Ingredients

    4 tostadas
    Beef for tostada:
    * 2 C shredded beef roast
    * sea salt
    * freshly ground black pepper
    * 1 small onion, chopped
    * 1 clove garlic, minced
    * 1 T olive oil
    * one quarter tsp. ground cumin
    * pinch cinnamon (opt)
    * 1/2 C Spanish style tomato sauce
    * 1/2 C broth
    * 1/2 bay leaf

    4 fried eggs
    hot refried beans
    hot rice

    Garnishes:
    shredded lettuce, or finely shredded cabbage
    1 tomato, chopped
    Queso Fresco, or feta cheese
    Mexican salsa




    Recipe

    Simmer the "beef for tostada" ingredients for 10 minutes until hot through and onions are cooked. Remove bay leaf.
    Assemble the tostadas on a serving plate by placing one tostada on plate and topping with one quarter of the beef mixture mounded in center.Top that with an egg(one on each tostada) Place shredded lettuce on the tostada around the meat and egg. sprinkle a little tomato on, some cheese on, and a little salsa if desired. place a second tostada on top of that and repeat with meat,egg, lettuce, tomato, cheese and salsa. Place refried beans on plate next to tostada, and rice next to that. make a well in the beans and put salsa or cheese in the well. Sprinkle the rice liberally with cheese. Serve hot. Garnish with minced cilantro, salsa, sour cream and diced avocado if preferred.

    Var;
    Use uncooked tortillas that are 1-2 days old. Fry tortillas crisp and drain in wire rack. Reheat if necessary. Over the tortilla place fried Mexican sausage and beans and cover with grated cheese, Just before serving place finely shredded green cabbage on top, a few sliced olives, and thick slices of avocado, using half an avocado on top tostada. Serve hot.

    Use chopped smoked brisket for the meat. Use red onion, chopped. Use rice and corn on the side. Good for a lunch.
