    Ice Cream, Toasted Coconut

    List of Ingredients

    1 T flour
    1/2 C sugar
    1/8 tsp salt
    1 egg, slightly beaten
    1 C milk, scalded
    1 C cream
    1 T vanilla
    1 C Bakers coconut, premium shred, toasted

    Recipe

    Combine flour, sugar, and salt. Add to eggs. Pour small amount of milk over egg mixture, stirring vigorously. Return to double boiler and cook until thickened, stirring constantly. Cool. Add cream and vanilla. Freeze, using 8 parts ice to 1 part salt. When partly frozen, add coconut, and continue freezing until firm. Serves 6.
