Battuto (for flavoring soup)

1 slice lean salt pork
1/2 onion
1/2 celery stalk
1 small carrot
4 sprigs parsley
2 T olive oilRecipe
Mince the salt pork with next 4 ingredients. Saute until golden, in the olive oil, over medium heat. Turn off the heat. This is the base for soup.
Var;
sometimes you will chop the ingredients to a paste and add sage or basil.
Some times 3 T butter will replace the olive oil.
For roast meat the battuto uses a little garlic and no sage.
For fish, add thyme and bay leaf.
