    List of Ingredients




    1 1/2 pounds beef brisket
    1 3-pound chicken
    1 1/2 pound beef tongue
    4 stalks celery
    2 carrots
    2 onions
    1/4 medium sized turnip
    4 plum tomatoes
    4 tsp salt
    10 whole peppercorns
    1 tsp marjoram
    1 tsp thyme
    2 bay leaves
    1 small cote-chino sausage
    whites of 2 eggs

    Recipe



    Place the meats, except chicken and sausage into an 8 quart pot. Add the vegetables and cold water to cover. Season with salt and peppercorns. Bring to a boil. Skim off froth.
    Add the herbs and simmer 1 hour. Add the chicken and simmer 1 hour.
    Prick the skin on the sausage and boil. simmer 2 hours.

    To serve;
    Remove the meats from the pan, reserving broth. Remove the sausage and discard the water. Cut the chicken up into serving pieces. Skin the tongue, slice thinly on the diagonal. Slice the beef and sausage. place on a hot platter and baste with a little of the hot broth. Serve with Italian Verde Sauce.
    Clarify the broth with slightly beaten egg whites and strain through cheesecloth.
