    Serves 8.

    List of Ingredients




    1 1/2 pound stew meat
    3 T olive oil
    2 C meatless Italian gravy
    1 can tomato sauce
    1 can chicken broth
    3 medium potatoes, cubed
    4 carrots, in chunks
    2-3 stalks celery, in chunks
    7oz can pitted ripe or green olives
    4oz can mushrooms
    1 tsp salt

    Brown meat in the olive oil. Remove from pan and add the meatless Italian gravy,, tomato sauce and broth. Simmer 10 minutes. Return meat to pan with vegetables, olives and mushrooms, with liquid from can. Season with salt. cover and cook slowly for 2 hours, stirring occasionally.

    Meatless Italian Gravy

    Makes 2 1/2 quarts.

    1 C dried mushrooms
    Hot water
    3 T olive oil
    3 C chopped parsley
    2-3 stalks celery, chopped
    1 medium onion, chopped
    2 garlic cloves, minced
    1/2 tsp rosemary
    1/2 tsp thyme
    1/2 tsp sage
    32 oz tomato sauce
    2 pounds canned solid pack tomatoes, chopped
    1 chili pequin
    1 1/2 tsp salt

    Soak mushrooms in the hot water, (follow package directions for time.)
    In a heavy stock pot cook the next 4 ingredients and the seasonings in olive oil until the vegetables are tender. Add next 3 ingredients.
    Drain the mushrooms, reserving liquid. Chop the mushrooms and add with the reserved liquid. Cover and simmer for 3 hours. Add salt last 15 minutes.
    Store in fridge up to 3 weeks. (or freeze.)
