Poached cod fillets
List of Ingredients
2 pound cod fillets
1 tsp salt
2 T minced parsley
1 T chopped capers
1/2 C olive oil
2 lemons
1 C black olivesRecipe
Place fish in a large fry pan. Add enough water to cover by at least half an inch. Add salt. Bring to a boil, reduce heat and cook gently until the fish flakes.Lift the fish out onto a platter. allow to drain and pour off any water.
While still warm, sprinkle with parsley and capers, dress it with olive oil and juice of 1 lemon. Cover with black olives. Garnish outside of platter with thin lemon slices. let the fish chill for half an hour. Serve cold.
