    2 C unbleached flour
    1/2 C + 1 T sugar
    7 T sweet cream butter, softened
    3 T shortening
    3 egg yolks
    1 whole egg
    1 T grated lemon or orange rind

    Recipe



    Sift the flour and sugar into a mound on a pastry board. Push a dent into the top. Add small dabs of butter and shortening. Lightly beat the eggs and yolk. Dump them in the dent. Start beating the flour into the egg with a fork, moving around the center. Beat until all is beaten in. Add the rind and working with your hands to form a soft dough. Do not handle excessively.
    Shape the dough and wrap it. Chill for at least half an hour. To use sprinkle the board with flour and roll out for whatever it is to be used for.
