2 1/2 pounds tuna steaks
1/2 C wine vinegar
4 T olive oil
1/2 pound sliced mushrooms
6 anchovy fillets
4 peeled Roma tomatoes
Battuto:
1 medium onion
1 carrot
3/4 tsp salt
1/2 tsp freshly ground black pepper
2 beef bouillon cubes, in 1/2 C water
1 C dry white wine
2 egg yolks
3 tsp lemon juice
1 celery stalk with leaves
1/2 tsp thyme
2 bay leaves
Recipe
Make the battuto, finely mince the ingredients. Saute in olive oil until golden.
Add mushrooms. Mash the anchovies to a paste. Add the tomatoes, mashing them a bit, add salt and pepper. Add the tuna. Bring to a boil and then lower heat and simmer 5 minutes.
Dissolve the bouillon and add to the sauce with the wine. Cook 15 minutes, until fish flakes easily, and sauce condenses a bit.
Beat egg yolks, add the lemon juice, then add this to the sauce in the pan, stirring constantly. Cook for 1-2 minutes, until smooth and slightly thickened. Pour over the fish and serve.
