    Black beans and polenta

    Recipe Introduction

    Serves 4

    List of Ingredients

    3 T haines olive oil
    1 medium onion, chopped
    4 large cloves of garlic, minced
    1/8 tsp cayenne
    1/8 tsp black pepper
    1 tsp cumin
    3/4 tsp ground coriander
    1 tsp dried basil
    1/4 tsp oregano
    1 can Westbrae natural black beans
    1 14 ounce can diced tomatoes
    polenta (or cornbred or rice)

    Recipe

    Heat oil in large skillet. Add everything except the beans and tomatoes. Saute until the onions are soft, about five minutes. Add the tomatoes and beans and heat until bubbly. Serve over slices of pan grilled polenta.
