Frijoles Refritos-(refried beans)

List of Ingredients
4 C leftover basic chili beans (no meat)
3 T chicken fat
4 cloves roasted garlic
1/2 tsp salt
4 scallions, sliced thin
1/2 tsp extra hot Bufalo sauce, or chili sauceRecipe
Take 1 cup of the chili beans and whirl to a smooth mash in a small food processor for 20 seconds. (use bean liquid as necessary)
Take 1 cup of the beans and whirl for 3 seconds for a half mashed bean.
Leave the remaining 2 cups of beans whole.
Mash garlic with a fork to a rough paste. Heat all but the scallion in sauce pan until hot, stirring to blend. Serve as a side dish topped with scallion and Queso fresco cheese or feta.(Cheddar or jack if you like that) You can also use these in tacos, burritos or casseroles, etc....
