    garbanzos roughly double in size when cooked.
    Makes 3-4 cups.

    List of Ingredients




    1 1/2 C dried garbanzos
    water to cover
    salt to taste

    Soak in cold water to cover at least 8 hours, changing water once.Drain beans and place in a large pot. Bring to a boil over medium high heat and allow to boil vigorously for at least 1 minute. Reduce heat to medium low and simmer gently until tender, 45 minutes to 1 1/2 hours. Add water as necessary to keep the beans covered. Stir in salt to taste and cool them in the broth.

    You can add, if desired, parsley sprigs (4), thyme sprigs (6) 1 small onion, cut up, a carrot, cut up, 1 fennel stalk quartered and up to 4 cloves pressed garlic. Add these to pot when boiling the beans and remove all but the garlic at end of the cooking time.
