Serves 6.
List of Ingredients
2 C dry Lima beans
Water
4 ham hocks
2 bay leaves
1 lrg onion, chopped
1/2 bell pepper, sliced in rings
1 can solid pack tomatoes
1 8-oz can tomato sauce
1 T salt
1/4 tsp pepper
1/4 tsp ground cloves
Recipe
Soak beans 8 hours(or boil 2 minutes and remove from heat for 1 hour). Add ham hocks, bay leaves and water. Keep beans covered with water and simmer 1 hour until tender. Add onion, bell pepper, tomatoes, tomato sauce, salt, pepper and cloves. Mix to blend. Pour into a 4 quart casserole. Cover and bake at 350 degrees F for 1 hour, until meat is tender. Remove meat from bones and return meat to soup.
