Serves 6.
List of Ingredients
1 pound black eyed peas
5 C beef broth
2 medium onions, finely chopped
4 lrg cloves garlic, finely chopped
3 lrg jalapeno peppers, finely chopped
2 medium bay leaves
all purpose Greek seasoning, to taste
4 oz jar diced pimientos, drained
Recipe
Place the black eyed peas in a heavy large saucepan. Add cold water to 3 inches above peas. cover and soak overnight. Drain and add the next 6 ingredients and water. Bring to a boil. Reduce heat to a simmer and cook 1 1/2 hours or until peas are tender. Add pimientos and season with salt and pepper.
Seasoning;
3 teaspoons dried oregano
2 teaspoons dried mint
2 teaspoons dried thyme
1 teaspoon dried basil
1 teaspoon dried marjoram
1 teaspoon dried onions (minced)
2 teaspoons dried garlic (minced)
Combine and store in airtight jar.
