    Lima beans and hog jowls

    You can substitute salt pork, bacon, or ham for the hog jowl.

    List of Ingredients




    1 pound baby lima beans,(2 C dried, or 5-6 cups cooked)
    6-8 cups water
    1 cup of cubed hog jowl (1/2 to 1/4 inch)
    1 tsp salt
    pepper to taste
    1/2 cup chopped parsley
    1/2 teaspoon Hungarian sweet paprika
    1 medium onion, chopped (same size as jowl)
    2 cloves garlic, minced
    1 7.6 ounce can Nestle table cream

    Recipe



    Cook the hog jowl in boiling water for 1 hour. Add lima beans and cook 1 hour. Add next 6 ingredients. All but the cream. cook 1/2 hour. Drain. Add table cream to the hot beans and stir well. Serve hot.

    Note: The table cream adds a very rich flavor, but you can use whipping cream if necessary.
