Serves 6-8.
List of Ingredients
1 T olive oil
2 C minced onion
1 T minced garlic
1 1/2 tsp salt
1 tsp ground cumin
1 tsp ground cinnamon
1/4 tsp lime juice
1 T tomato paste
5 14oz cans kidney beans, drained
1/2 tsp lime zest
1/2 tsp orange juice
2 tsp crushed red pepper
Recipe
Heat oil in a large, thick bottomed pot, add the onion and saute for about 5 minutes. Add garlic, salt, cumin and cinnamon. Saute another 5 minutes on low heat. Stir in the orange juice and lime juice and cook for 10 minutes over very low heat. Add the beans, crushed red pepper and lime zest, bring to a boil and cover. Simmer on low and stir often. Cook 20 minutes.
