    Garbanzos, Spicy Fried

    List of Ingredients

    2 C dried garbanzo beans (chickpeas), soaked overnight in water
    1 1/2 tsp salt, plus extra for cooking beans
    1/4 tsp black pepper
    2 T ground cumin
    1/4 tsp cayenne pepper
    1/2 tsp ground coriander
    peanut oil

    Recipe

    Drain the garbanzos and cover with fresh water. Bring to a boil, reduce heat and simmer for about an hour until tender. Add a little salt during the last 15 minutes of cooking. Drain. You will have 5 C cooked beans.
    Combine the 1 1/2 tsp salt, black pepper, cumin, cayenne and coriander in a bowl, or shaker. Pour peanut oil in a skillet to 3 inches deep. heat to 375 degrees and fry the garbanzos in batches until golden. Remove with a slotted spoon to a bowl. Toss with spices. Serve hot. If you wish To preserve them for up to a week, fry as above, then bake at 300 degrees for 40 to 50 minutes until crunchy. Toss with spices

    Var;
    Add fresh thyme leaves, (1/2 tsp) and olive oil in place of the peanut oil.
