    Beef-Rice Dish, Bayou

    List of Ingredients

    3 tbsp. shortening
    3 tbsp. all-purpose flour
    2 Ig. onions, minced
    3 lb. ground beef
    1/2 c. minced celery
    3/4 c. minced green pepper
    3 cloves of garlic, minced
    2 bay leaves
    Salt to taste
    1 tsp. each cayenne pepper, pepper
    2 c. rice, cooked
    1/2 c. each chopped parsley, shallots

    Recipe

    Melt shortening in large skillet. Add flour. Cook until lightly brown, stirring constantly. Add onions. Saute until transparent. Add next 8 ingredients. Cook, stirring constantly until ground beef is lightly brown. Add 2 cups water. Simmer for 2 hours. adding additional water as needed to prevent sticking. Add rice, parsley and shallots. Heat thoroughly.
