    Beef, Classic Roast

    Recipe Introduction

    Preheat oven to 350 degrees F. Serves 6 to 8.

    List of Ingredients

    4-6 pound beef ribeye roast
    2 T + 2 tsp chopped fresh thyme
    2 T minced garlic
    Salt to taste
    Pepper to taste
    2 T minced shallot
    1 C dry red wine
    2 tsp country Dijon-style mustard
    1 T butter

    Recipe

    Combine thyme, garlic,salt and pepper. Press onto beef roast. Place roast fat side upon rack in shallow roasting pan. Roast for 1 3/4 -2 hours for medium rare, or until instant read thermometer reads 135 degrees F.. For medium until it reaches 150 degrees F.. Let stand 15 minutes (temperature will rise to 145 for medium rare or 160 for medium.)

    Skim fat from drippings. Combine with shallots and 2 teaspoons thyme in medium saucepan. Cook and stir over medium heat2-3 minutes or until shallots are crisp-tender. Add wine and mustard , simmer 8-10 minutes or until reduced to 3/4 cup. Stir in butter. Season with salt and pepper if desired.

    Carve roast and serve with the shallot butter.
