    Serves 8=10

    List of Ingredients




    4 T olive oil
    3 T balsamic vinegar
    3 T minced fresh thyme
    3 T minced fresh rosemary
    1 T pressed garlic
    1 tsp cracked pepper
    4 1/2 pound fillet of beef
    2 tsp sea salt
    herb sprigs for garnish
    horseradish sauce

    Recipe



    Trim, pat dry and tie up the fillet of beef.
    Mix the oil, vinegar, herbs, and spices. Rub on the beef and cover it with plastic wrap. Chill 2 hours, (or overnight).
    Preheat oven to 500 degrees F. Roast meat on a rack in a roasting pan, for 35-40 minutes, or until internal temperature reaches 130-135 degrees. Remove strings, slice thin and garnish with sprigs and serve with horseradish sauce.
