    2 T butter
    4 onions, chopped
    2 1/2 pounds diced lamb
    1 T salt
    2 bay leaves, crushed
    1 clove garlic, pressed
    thyme
    2-3 T, curry powder
    ginger root, grated
    1 diced apple
    chutney
    grated coconut
    coconut milk
    1 qt stock
    cornstarch

    Recipe



    Melt butter,brown onion lightly, add lamb and salt. Add all ingredients from bay leaf to coconut milk. Add stock, bring to a boil. Simmer 2 hours. Thicken with cornstarch. Serve over rice if desired.
    Serve condiments in small bowls;
    diced eggs
    chutney
    diced bananas
    chopped raisins
    diced apples
    chopped onion
    mango or papaya (or any tart fruit)
    coarsely chopped salted peanuts
