    Serves 6.

    List of Ingredients




    1 1/2 pounds sliced liver
    1 1/2 T flour
    1 tsp salt
    pepper
    2 T bacon fat
    1 onion, minced
    1 bell pepper, chopped
    2 cups chopped tomato
    3 C cooked baby Lima beans
    tomato juice


    Recipe



    Cut liver in 1 inch pieces. Mix flour, salt and pepper to taste. Dredge the liver in this and saute in fat in a skillet until lightly browned, turning occasionally. Add onion and bell pepper, saute 1 minute, stirring occasionally. Add tomatoes and 1/4-1/2 C juice to moisten well. cover pan and simmer on medium for 20 minutes.
    Serve with hot Lima beans.
