    Pork dogs

    The complete outdoor cookbook..Yvonne Young Tarr. .1973

    List of Ingredients

    2 1/2 pounds very lean ground pork
    salt and freshly ground pepper to taste
    1/2 C flour
    4 large onions, peeled and sliced
    4 large green peppers, sliced
    3 T oil
    16 hot dog rolls

    Recipe

    Season the pork with salt and pepper. and shape into 16 "pork dogs" about 4 inches long and 1 inch in diameter. Roll them in flour and arrange side by side in a 1 inch deep wire basket. Push the hot coals out toward the sides of the grill to form a rectangle of coals slightly smaller than the basket. Grill until well done, about 15 minutes on each side. Meanwhile saute the sliced onions and green pepper rings in the oil. Serve the "dogs" hot on toasted rolls with the onions and peppers, and top with ketchup and mustard. Repeat until all is done.

    My notes; I like to add a little caraway to the meat and broil them, and serve with sauerkraut, onions and peppers.
