    List of Ingredients




    1 pond boiled tripe
    1 egg
    1/2 C bread crumbs
    1/2 tsp onion juice
    1 tsp salt
    dash pepper

    Recipe



    Grind tripe and combine with remaining ingredients. Shape into patties and fry in greased skillet until browned.

    Baked tripe with Bacon;
    Wrap each patty with a slice of bacon and bake in a hot oven (425 degrees F.) for 8-10 minutes, or until bacon is crisp.

    Tripe fritters;
    Sift a cup of flour with 1/2 tsp salt. Combine 1 cup milk, 1 tsp melted fat and 1 egg, slightly beaten. add to the flour and mix until smooth. Dip tripe patties into the batter and fry in hot deep fat (380 degrees F.) until browned, or make the patties 1/2 inch thick and brown under low broiler heat.
